Move the meat to the cooler side, over indirect heat, and continue to cook. Keep the tri tip roast in the refrigerator (below 40°f/4.4°c) until at least 3 hours prior to preparation. Place it on the warm side of the grate (not directly over the coals), close the lid, and grill it.
Next, take the roast out 45 minutes before you plan on cooking it so it can reach room temperature. Usually, a rare steak will come to about 145 degrees fahrenheit, medium will be 150 to 160. This simple rub allows for the taste.
